Podcast Conversation on our interiors with Maxime Bouttier: Ethanol: wine, matter, the memory of a neighborhood

What remains of a place when one decides to transform it without erasing its history?

In this new episode, Aurore opens the doors of Éthanol, the new Parisian address of the Michelin-starred chef Maxime Bouttier.

Located in a former century-old tailoring shop, the bistro retains certain hallmarks: its volumes, its façade, and the large granite slabs, preserved as a testament to history. The chef has also chosen strong materials: wood, limestone, corten, and specially developed roofing tiles.

A conversation about the transformation of a place between heritage, matter and freedom.
